How business works in Tarifa

A Tarifa business lives two lives. In season there aren't enough hands: the phone never stops, bookings come in in English, German and French, and the person who should be answering them is on the beach teaching or at reception with a queue. Out of season, the volume doesn't justify having someone waiting in case something comes in.
On top of that, the wind is in charge. If the Levante is blowing today and nobody can go out, the schedule has to be rearranged and everyone told, one by one, while the phone rings. Hiring more people in August doesn't fix that: whoever joins doesn't know the business, and by October they've gone.

The wind decides and you rearrange: who's coming tomorrow, whose time you change, who you refund. By hand, that's a whole afternoon of messages, which also have to be written in three languages.
